Your process sounds good and beersmith should calculate your mash thickness for you. I have attached the slides from the 2015 NHC presentation about enzymes and mashing.

Do you batch sparge or fly sparge? Have you checked the pH of your mash? Do you do any mineral adjustments? What is the thickness of your mash? Have you checked your thermometer for its accuracy?

Time
Temperature
Thickness
Ph

Sounds like a great idea to me, but I don't know of any place that meets the criteria. Could possibly use a meeting room at one of the hotels in town.

I had some issues when I brewed my version. The amount of hops overwhelmed my hop spider causing my new plate chiller to clog during knock out. I had to reverse the plumbing and work out the clog and filter out the rest of the hops manually. I had to reboil the wort to for 15 min sanitize it. After ...

The math is simple it is just
( ( [Final Volumne Gal ] x [OG] x [% Grain] ) / [ Points/Lb Grain]) / [% Efficeincy ] = Pounds of grain
( ( 5 x 58 x . 74 ) / 38 ) / .71 = 7.95 lbs 2 Row
