Dusting off

Postby Peter Munoz » Sun Oct 09, 2011 3:15 pm

Well the temps are reasonable , I have 2 gallons of beer left so I needed to brew. I figured Id change things up a little .
%50 wheat %50 vienna.
Mashed @154 for 60 min
1.2 oz Centennial @60
1.2 " " @5
OG 1.051
Cooled , pitched 2 vials of San Diego yeast in one and WL 550 (achouffe) in the other.
now I have 5 gallons of two beers. The SD yeast is new to me so Im waiting to see results. The Achouffe Ive used before. It seems to always give me trouble. But without failure there is no success
Ive heard rumors the San Diego will be done in 3 days. Complete ! ready to Keg. Is it true?

Ok , Its been 37 hours since yeast was pitched.
WL 550 still chugging away. It has about 1/2 an inch of karausen on top. Somewhat what Id expect.
WL 090. Well it has patches of yeast just on surface. I pulled sample. 1.011. ok.. Still hazy , Aroma is light grapefruit tropical citrus. Some Isoproponol mixed in. Clean
citrus jucyfruit mixed with diacytil. not great but a lot better than Id expect. underneath everything else seems to be ok. I will give it another 3 days at a warmer temp to clean it up.

Last update.
Day 5 Diacytil was at lower end.
Day 7
Well this turned into a nice session wheat ale with a firm bitterness. Nice malt comes thru , low esters and fairly clear even though it was a 50 /50 wheat to malt.
